Patty and Val Jorgensen, organic farmer and registered nurse, will welcome you to Jorgensen Farms for a day designed for you and your friends.
Girl Thyme is herb-infused, farm-fresh organic fun! You’ll wander through the fields of herbs, walking and gathering the ingredients you’ll need for your Girl Thyme organic lunch. Learn how to enrich your life and improve your health with a personally designed exercise, nutrition and stress reduction plan. Get your girlfriends together and come on out for “Girl Thyme Down on the Farm.”

- Enjoy all-season fun—Val’s five passive solar powered greenhouses provide a year-round growing environment
- Prepare your lunch with Val and Patty using your locally-grown, organic ingredients for a delicious culinary treat

Sample itinerary that can be tailored to your group with a variety of activities:
9:30-9:45 a.m.: Arrival
10-11:15 a.m.:
- Meet Val Jorgensen, organic grower (see bio below). She’ll introduce you to the farm and to the members of her team. Patty will tell you about the program. Together they will guide you through the Girl Thyme experience.
- Learn basic dynamic warm-up exercises from Patty for walking and/or any fitness workout.
- Girl Thyme—Rain or Shine! Workout as never before with Tim Donahey, CPT, as you exercise like a farm hand—rake that hay, push that wheelbarrow and no hiding under the hay bales! Farming goes on 365 days a year—no matter the weather forecast, so we will be doing the same—working out—outside!!
11:15 a.m.-1:15 p.m.:
- Walk and gather organic ingredients for your lunch while learning the health benefits of locally grown, organic vegetables and herbs.
- At noon, meet Val at the outdoor kitchen as she guides you through lunch preparation and then joins the group for the noon meal.
- Val, a registered nurse, will talk with you about the most common health issues related to diet and exercise—exploring the preventative and healing properties of healthful eating for the big four: joint disease, diabetes, heart disease and cancer.
1:15-1:45 p.m.: Take a break—sip some herbal tea, journal, relax!
1:45-2:45 p.m.:
- Yoga with a certified instructor—all levels will be accommodated and no experience necessary! Focus on breathing and gentle stretching.
- Girl Thyme yoga will close with a meditation. Then sip a cup of herbal tea or a glass of wine as you journal about your day and take time to share thoughts with each other.
When you say “goodbye” to Jorgensen Farms, you’ll take home recipes, relaxation techniques, and a new perspective on life to get you started on your wellness program!

Jorgensen Organic Farms is a drive-to destination (located in a township bordering Gahanna) on Gahanna’s Herbal Trail. Val has owned the farm for 20 years and been certified organic for 10 years. On 65 acres of rolling land, she grows herbs, vegetables and flowers and raises pastured beef and lamb, as well as producing honey (with a selection of herb-infused honeys). She supplies a variety of local chefs, restaurants and markets, including Jeni's Ice Cream, Northstar Cafe, Rigsby's, Alana’s Food & Wine, Green Bean Delivery, Harvest Pizzeria, New Albany Farmers Market, Clintonville Farmers Market, Two Caterers, and Due Amici. In 2011, she attended full time for nine months and was certified at Michigan State in their Student Organic Farm Training program in Passive Solar Greenhouse Production. She has built five hoop houses on the farm that are now in production. She was featured in the spring 2011 issue of Edible Columbus and the 2011 Nov/Dec issue of Healthy New Albany. In addition to these credentials, she is also a licensed registered nurse.
